Empanadillas de Atún

3 cans of tuna
1-2 tomatoes
1 red pepper
2 hard boiled eggs

After chopping up the tomatoes, saute with a pinch of salt and sugar until it becomes a paste.
After chopping up the peppers, saute until soft.
Chop up the hard boiled eggs.
Mix the tuna, tomatoes, pepper, and eggs.
Put into the shells, fold over, and seal with a fork.
Brush the yellow of an egg over the tops of the shells.
Put in the oven around 350 degrees for 5-10 minutes, or until the shells are a light brown.

      1. I meant, the sandwich I was eating was no longer as tasty. Its because the food you posted sounded so good. My sandwiches here would be rejected by most poor people.

    1. Oh, that’s the plan. And, some sangria. Cade has already decided that I’m making him some Spanish food when we get back. lol.

  1. I think that I didn’t like Sangria when I had it before. But I bet that if I had enough of it, I would forget that I didn’t like it.

    1. Ha! Maybe you’ll like the version I make. I can try to make it a little extra sweet so it tastes better for ya. 😉
